Ingredients
- 3 lbs chicken breasts - boneless, skinless
- 2 tsp dried basil
- 2 tsp dried thyme
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 bay leaf
- 3 clove garlic - minced OR 1 Dorot garlic pod per clove
- 1 cup Kalamata olives - pitted, drained
- 1/4 cup chicken broth
- 2 14oz can artichoke hearts - quartered, drained
- 1 TBSP balsamic vinegar
- 1 yellow onion - thin sliced
- 1 cup roasted red peppers - chopped
- 1/4 cup heavy cream
Instructions
- Add small amount EVOO/Avocado oil to insert to prevent burning.
- Place chicken breasts in the insert.
- Combine all dry ingredients in a small bowl and mix well. Season the chicken with half of the seasoning mixture.
- Add the remaining ingredients to the slow cooker (except for the heavy cream) and sprinkle in the remaining seasoning mixture.
- Secure lid. Press Poultry button and cook for 15minutes with valve sealed.
- Once finished, perform manual steam release. Remove chicken and slice.
- Add heavy cream to pot and mix in. Add chicken back into pot.
- Serve hot over lentils, lentil pasta or quinoa.
