One-Pot Mediterranean Chicken

Ingredients  

  • 3 lbs chicken breasts - boneless, skinless
  • 2 tsp dried basil
  • 2 tsp dried thyme
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 bay leaf
  • 3 clove garlic - minced OR 1 Dorot garlic pod per clove
  • 1 cup Kalamata olives - pitted, drained
  • 1/4 cup chicken broth
  • 2 14oz can artichoke hearts - quartered, drained
  • 1 TBSP balsamic vinegar
  • 1 yellow onion - thin sliced
  • 1 cup roasted red peppers - chopped
  • 1/4 cup heavy cream

Instructions

  • Add small amount EVOO/Avocado oil to insert to prevent burning.
  • Place chicken breasts in the insert.
  • Combine all dry ingredients in a small bowl and mix well. Season the chicken with half of the seasoning mixture.
  • Add the remaining ingredients to the slow cooker (except for the heavy cream) and sprinkle in the remaining seasoning mixture.
  • Secure lid. Press Poultry button and cook for 15minutes with valve sealed.
  • Once finished, perform manual steam release. Remove chicken and slice.
  • Add heavy cream to pot and mix in. Add chicken back into pot.
  • Serve hot over lentils, lentil pasta or quinoa.
