Ingredients  

  • 2 eggs
  • 2 pound boneless, skinless chicken thighs
  • 3 TBSP chili garlic sauce - divided
  • 1.5 cup panko bread crumbs - gluten-free or regular
  • 1.5 tsp garlic powder
  • 2 tsp fine sea salt - divided
  • 1/4 tsp cayenne pepper
  • 1/3 cup honey

Instructions

  • Preheat the oven to 375°F, and line a baking sheet with parchment paper and spray with oil.
  • In a medium size bowl, whisk together the eggs with 1 teaspoon of salt and 1 tablespoon of chili garlic sauce.
  • Pour the panko bread crumbs into a shallow dish.
  • Combine the garlic powder, remaining teaspoon of salt, and cayenne pepper in a small bowl.
  • Dip the chicken thighs in the egg wash, then press them into the panko bread crumbs and place them on the parchment lined baking sheet.
  • Sprinkle the panko coated chicken with the spice mixture, then spray with oil.
  • Place the chicken into the oven and set a timer for 15 minutes. When the timer goes off, flip the chicken and cook for an additional 5 minutes.
  • While the chicken is baking, whisk together the honey and 2 tablespoons of chili garlic sauce together in a small bowl.

Drizzle, Don't Drown!!: This can actually be a low-carb, keto-friendly dish if you will drizzle the sauce or dip into the sauce. You will not use anywhere near the full amount of sauce doing it this way. 
Customize the Spice Level: This recipe is all about the hot honey chicken, but we understand if you prefer a milder kick. If that's the case and cooking for the faint of heart, change TBSP of chili-garlic to tsp and leave out the cayenne. If you want something in the middle just cut the chili-garlic in half. 
Explore Different Cuts of Chicken: Variety is the spice of life, and the same goes for chicken! If you prefer chicken breasts over thighs, go ahead and use them. Just make sure to give them a little tender love by pounding them to a half-inch thickness.
