Equipment

  • Pressure Cooker

Ingredients  

  • 1 pound ground beef
  • 1 pound ground turkey
  • 1 yellow onion - diced
  • 2 clove garlic - sliced OR 1 Dorot garlic pods per clove
  • 1 packet Ranch Dip
  • 2 packet Taco Seasoning - choose mild to decrease spice
  • 1 can gold & white corn - with juices
  • 1 14oz can great northern beans - OR navy beans, rinsed
  • 1 14oz can pinto beans - rinsed
  • 1 14oz can black beans - rinsed
  • 2 cans Rotel Original - choose mild to decrease spice
  • 1 jalapeno - diced (optional based on heat preference)
  • 1 cup purified water

Instructions

Instant Pot

  • Set Instant Pot to Saute. Add ground meat, onion, and garlic to the bowl. Cook until meat is browned.
  • Push meat and onions to the side and tilt bowl. Use paper towels to soak up excess grease.
  • Add Rotel, Ranch seasoning, and Taco seasoning. Stir to combine.
  • Add corn, beans, water and jalapenos (optional). Stir to combine.
  • Turn off Saute function. Seal lid on Instant Pot and press Manual cook. Reduce time to 15 minutes.
  • Once finished cooking, use rapid release function.
  • Garnish with toppings of your choice and serve hot. Enjoy!

Standard Stock Pot

  • Set stovetop heat to Med-High. Add ground meat, onion, and garlic to the oit. Cook until meat is browned.
  • Push meat and onions to the side and tilt pot. Use paper towels to soak up excess grease.
  • Add Rotel, Ranch seasoning, and Taco seasoning. Stir to combine.
  • Add corn, beans, water and jalapenos (optional). Stir to combine.
  • Turn heat to High and bring to a boil. Once boiling reduce heat to Low-Med. Cover and allow to simmer for 10 minutes.
  • Garnish with toppings of your choice and serve hot. Enjoy!
