Ingredients
- 6 eggs
- 8 oz thick cut bacon - sliced in half lengthwise, then chopped into pieces
- 2 cup broccoli florets - if using frozen, make sure they are thawed
- 8 oz shredded cheddar cheese
- 1/2 cup cottage cheese
- 1/2 tsp fine sea salt
- 1/4 tsp ground black pepper
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/3 cup shaved parmesan cheese - OR grated
Instructions
- Preheat the oven to 350F.
- Cook the bacon in a non stick pan over medium heat. After 3 minutes, add the broccoli florets and cook until bacon is brown and crispy and florets begin to soften, another 2-3 minutes. Remove to paper towels to drain. Pat/press with paper towels to remove excess grease.
- While bacon and broccoli are cooking combine the eggs, parmesan cheese, cottage cheese, seasonings and spices in a medium bowl. Whisk well until all blended. Use an electric hand mixer if you have one.
- Spray a quiche pan or pie plate with non stick cooking spray.
- Add the broccoli and bacon mixture to the pan. Top with half of the cheddar cheese.
- Pour egg mixture over the broccoli and bacon mixture. Sprinkle the remaining half of the cheddar over the quiche. Bake the crustless quiche in the preheated oven for 50-55 minutes or until the center is puffed and golden brown
- Allow the quiche to cool slightly and then cut into 8 pieces and serve.
