Preheat oven to 375F.
Slice the tops of the peppers off and remove the seeds. Place open side up in 9x13 baking dish and place in the oven for 10 minutes while completing the next steps.
In a large pan, heat olive oil. Sauté onion, mushroom, turkey and sausage for about 10 minutes until meat is browned and veggies are soft. When everything is cooked, turn off the heat.
Stir in raw cauliflower rice, tomato sauce and spices.
Remove peppers from the oven and carefully stuff them with the mixture and top each pepper with remaining tablespoon of tomato sauce. You can use a spoon or your hands to fill the peppers and press the mixture down to fit all of it inside.
Cover the peppers with foil and bake for about 35minutes until peppers are easily pierced with a fork. Pull out, uncover, top with cheese and place back in oven uncovered for 3-4 minutes on BROIL.
Remove from oven, serve hot, and enjoy!
